Spaghetti with Sardines
Contributor: Titchie Carandang-Tiongson, New York University, New York
Notes: This is incredibly easy to make but very flavorful. You can serve with itlog na pula on the side.
Ingredients

1 lb spaghetti
2 cans Portuguese Sardines
2 cloves garlic, crushed
5 plum tomatoes, chopped
Parmesan cheese

1. Cook spaghetti according to package instructions.
2. When cooked, add sardines (including the oil), garlic, and tomatoes. If too dry, add some of the pasta water.
3. Season with salt and pepper.
4. Sprinkle with parmesan cheese.
5. Serve hot!

Variations: Sauté garlic, onions, mushrooms, tomatoes and olives in olive oil. Add a little white wine. Then add to pasta along with the sardines. This is a good way to get rid of odds and ends in the fridge.
